COOKING INSTRUCTIONS
1. Grind black pepper, chili powder, sesame seeds and peel in a mortar. Roll the breast in a mixture and leave to marinate for two hours.
2. Lightly fry the pickled breast with vegetable oil - so, that inside it remains damp. Fry each side for five minutes, remove from heat, cover and let stand for ten minutes.
3. The leaves of Chinese cabbage cut the bottom half of a centimeter by five. Bring the broth to a boil, salt it, remove from heat and put cabbage into it for five minutes.
4. Boil in salted water one bundle of ramen noodles.
5. Put in a deep plate of cabbage, noodles and thinly sliced duck. Pour broth, sprinkle with finely chopped green onions and a pair of thin rings of chili.
Advice to the recipe
To make a duck broth, birds skeleton and wings are put in a saucepan, pour three liters of water and cook on low heat for two hours. The broth should turn out to be transparent, therefore it is necessary to watch, so that it does not boil, and remove the skum if it forms.
